Specialty Diets
Atkin’s Diet
The Atkin’s diet is familiar to many since it has been around since the 1970’s. Developed by Dr. Robert C. Atkins, it has some similarities to some other diets listed here which focus on high protein and low carbohydrates. Meat, seafood, eggs, low carbohydrate vegetables, nuts, seeds, and healthy fats. Many of Epiphany products contain these exact things.
Candida Diet
Candida Albicans is an opportunistic pathogen that takes advantage of the gut while its defenses are down. Symptoms include bloating, indigestion, nausea, diarrhea, and gas. The best combat for this overgrowth is to avoid sugars, caffeine, gluten, and drink little alcohol and eat plenty of fermented foods, healthy proteins and fats, gut healing food like bone broth, cabbage juice, and coconut oil. We have plenty of these wonderful ingredients for you at Epiphany.

Hoshimoto’s Diet
Hashimoto’s disease is a thyroid disorder and an autoimmune disease. In fact it is the most common autoimmune disease in the United States which no two people have the same version of this disorder. The fact that Hashimoto’s is so personal and specific, it can be difficult to make a generalized diet. A person with Hoshimoto’s should have a diet tailored by their personal needs with direction from a doctor.
Ketogenic (KETO) Diet
The Ketogenic diet focuses on converting the body into a state of ketosis, where the body is using fat for energy, as opposed to glucose. This is achieved by focusing the diet on fat, with a low protein and extremely low carbohydrate intake. Cheating on the keto diet can be dangerous, and maintaining a state of ketosis is tricky as it involves a high amount of discipline in food choices. We have several options available at Epiphany.
Paleo Diet
The paleo diet, especially as it pertains to Epiphany paleo products, means that they contain no grains, dairy, refined sugars, yeast, soy or corn. Our base flours are almond flour, coconut flour, flax meal, arrowroot starch, tapioca starch, and other nut flours. We use coconut oil in place of butter and natural sugars such as coconut palm sugar, dates, honey or maple syrup in place of regular cane sugar.
Plant Paradox (Lectin Free) Diet
The Plant Paradox Diet is outlined in the book, “The Plant Paradox” by Dr. Steven Gundry, that calls to avoid gluten as well as Lectin, which is a protein found in many vegetables, fruits, and nuts. In fact, according to Gundry, gluten itself is a type of Lectin. Fortunately, of the many seeds, nuts, and flours that can be consumed on the plant paradox list, almond flour is one of them. Almond flour is one of our favorites at Epiphany bakery and makes up many of our products.
SIBO Diet
The word SIBO is an acronym for Small Intestinal Bacterial Overgrowth, which basically means too much bacterial in the small intestine. The SIBO diet is to conquer the overgrowth with diet and in conjunction with with antibiotics. People who have celiac disease are quiet vulnerable to SIBO, as celiac disease disturbs gut motility. With this in mind options of food include: Wild-caught tuna and almond, grass fed beef and lamb, leafy greens, squash, carrots, cucumbers, tomatoes, bananas, blueberries, grapes, cantaloupe, and honeydew melons, pineapple, strawberries, quinoa and sprouted nut butters.
Specific Carbohydrate Diet
The specific carbohydrate diet was developed to treat Celiac disease in the 20th century by Sidney V. Haas, long before gluten was discovered. The diet focuses on limiting diaccharides and polysaccharides(complex carbohydrates) which aims to heal gut damage. Adherents to the diet should avoid cereal grains, potatoes, and lactose diary.
